Hi Jon

I think the best choice would be this:

Great holiday! There was a lot of snow, which was really good.

In other words, the addition of the comma means that it wasn't just the snow itself that was good, but rather the whole fact that there was a lot of snow.

If you want to say that the quality of the snow was good, then you could use 'that' (and no comma).
