Expression "Nice to meet you"

What should I say when somebody says, "Nice to meet you" to me?

In that informal situation an apprpriate response could be: Me too/Same here.

I said "Nice to meet you" to a stranger whom I met in a bookstore. He said "You too".

I thought over why he said that. I figured it was because, "Nice to meet you" is short for "It's nice to meet you" and by "You too" he meant "It's nice to meet you too"

Please correct me if I am wrong.
