Quit means simply stop as in: He's trying hard not to buy any more cigarettes because he wants to quit smoking.

'Give up talking' isn't a collocation, that is, words that go together. But we can give up a job, for example, or smoking/coffee/fatty foods (things that are bad for you) or regular activities.
