If you are talking about the type of life he lives (western as opposed to eastern or southern, etc.), then I might say any of the following: - He has a western lifestyle. - He lives a western lifestyle. - He leads a western lifestyle.
In your sentence with the word "in", I would tend to expect a hyphen and also a noun after the word "style": He lives in a western-style house.
Using the word "the", I would expect "the western style" to be used like this: The western style of life is his preference.
