Are there tapas (flavors of tapas) that are common in Madrid, or do restaurants mostly offer their own unique ingredients?

Who doesn’t, eh, he he? Some people may not like all of them, but in the huge variety of mini-dishes offered there’s bound to be at least a few that will appeal to their palates. I can’t resist tapas – not that I try to, mind you. Give me tapas instead of a proper meal any day. If you enjoy flavour (and colour and texture!) contrasts, then this is your thing. 'Tapeo' (going out for tapas) is undoubtedly one of our most civilized customs!

Tapas bars often have their own specialities, but some of the titbits are ever-present, like the typically Madrilenian

‘callos’ – tripes
‘champi?ones al ajillo’ – garlic mushrooms
‘morcilla’ – black pudding.

Other regular ones are:

‘gambas al ajillo’ – garlic shrimps
‘tortilla’ – potato omelette
‘jam?n serrano’ – cured ham
‘jam?n de jabugo’, also called ‘jam?n ib?rico’ or 'pata negra' (black leg) – special cured ham (very expensive!)*
‘pulpo’ – octopus
‘chopitos – baby fried squid
‘croquetas’ – (ham, cod, chicken, etc.) croquettes
‘ri?ones al Jerez’ – kidneys in sherry

* This ham, which is cured for about nine months to two years, is from black hoofed pigs that have grazed on acorns.
